On our way out of the YMCA the other morning, Liam asked to make muffins. I remembered seeing this recipe for grain and sugar-free muffins and saved it for another time. Check out the recipe on their FB page Grain Free, Sugar Free Kids! Luckily we had all the ingredients on hand, so here we are! Baking together!
Mixing the wet ingredients first! Eggs, coconut oil and coconut milk
Time for the dry ingredients! Coconut flour, stevia (touch), baking powder and salt.
Put out paper liners and count the cups!
Fill them up. Grain free batter is always a different consistency as well as the end result. This is basically what they look like after they cook too!
He was very intent on using the garbage disposal. He looks like a natural cleaning up! Ha!
18 Minutes at 350 degrees.
Enjoying the fruits of our labor about 25 minutes later. He ate four of them. I love his excitement.
